This yummy lemon rice recipe goes well with our previous recipe for Palak Paneer or your favorite rice dish!
Indiana Lemon Rice with Peanuts

1 1/2 cups uncooked rice
Water
Juice of 6 lemons, or to taste
Zest of 2 lemons
Peanuts, to taste
Yellow food coloring
Salt, to taste
1) Add rice and water to pan. Make sure the water is at least 3 inches above the rice. Add salt. Bring to a simmer.
2) Add lemon juice, zest, and food coloring.
3) Taste and add more lemon or salt as needed.
5) Simmer until rice is cooked. Drain. Add peanuts and serve.
